Truffle
The truffle is gastronomy's most valuable mushroom and grows underground near the roots of oak, hazel and beech. Summer truffles from Gotland are available in Scandinavia. The intense aroma is best released by grating the truffle over warm dishes. Truffle foraging in Denmark is developing, and quite a few can now be found in Danish forests.
