Wild berries
Sloe berries are small, blue-black berries from the blackthorn bush that are extremely sour and astringent when raw, but are transformed by frost or freezing. They are classically used for sloe gin and sloe schnapps, and can also be made into jelly. The bush's white flowers are among the first in spring. I like to make sloe olives.
