Juniper berries are the aromatic, blue-black berries from the juniper bush with a resinous, spicy flavour. They are indispensable in Scandinavian game cooking and are also used for gin, sauces and marinades. The berries ripen over two years and are best picked in late autumn. I prefer the green berries, which taste more fresh and sour, citrus-like. That flavour is a big part of New Nordic cuisine.
