Toast with smoked mushrooms and soy-cured egg yolk

This is pure mushroom deliciousness and a sure winner when dedicated meat eaters need to be convinced of the possibilities in the world of mushrooms.

Ingredients

  • mixed mushrooms
  • olive oil
  • lemon juice
  • salt and pepper
  • good bread
  • Soy-cured egg yolk:
  • eggs
  • soy sauce
  • spring onions for garnish

Instructions

  1. Place egg yolks in enough soy sauce to cover for 1 to 2 hours – the longer, the firmer.
  2. The easiest way is to grill the cleaned mushrooms first whole over medium heat. Let them sweat out their liquid, and season with salt and pepper.
  3. Remove the mushrooms, and cut them into smaller pieces on a cutting board. Then place them in a metal tray or another flat dish that can handle being on the grill.
  4. Now gather coals at one end of the grill, and place smoking chips, juniper branches, apple leaves, or nettles on the coals so they produce smoke.
  5. Place the dish with the mushrooms in the grill, and put the lid on. Let the dish sit for 5 minutes or more, depending on the amount of smoke, and optionally add more smoking chips.
  6. Toast a piece of good bread.
  7. Toss the mushrooms in a good olive oil and lemon juice before arranging them on the bread. Make a small hollow for the egg yolk.
  8. Carefully lift the egg yolk into the hollow, and sprinkle with a little finely chopped spring onion.
