Chickpea and St. George's mushroom omelette

An omelette with chickpea flour can provide a bit more satiety and substance. St. George's mushroom with its fine bite and light floury flavour works well here, but most other mushrooms do too.

Ingredients

  • 2 persons
  • St. George's mushroom
  • oil for frying
  • 2 dl cream
  • 2 eggs
  • 2 dl chickpea flour
  • a little salt
  • Serving:
  • herbs for garnish
  • optional a good salad

Instructions

  1. Whisk cream, eggs, chickpea flour and a little salt together.
  2. Cut the mushrooms into slices or cubes, and fry them in oil in the pan. St. George's mushroom needs a little time to release its floury aroma. When done, add butter.
  3. After 5 minutes, put the lid on, and flip the omelette – do it over a sink if you like.
  4. Finish baking for 2-3 minutes in the oven at low heat.
  5. Serve with some herbs on top, and optionally a salad.
