Grilled pork tenderloin in mugwort
Main courses
Easy
30 min
Pork tenderloin is grilled and tied together with mugwort, so the meat absorbs the herb's spicy aroma.
Wild ingredients
Instructions
- Trim the tenderloin free of sinews and clean the mugwort.
- Grill the pork tenderloin until the surface is light brown. Season the meat with salt and pepper.
- Place the tenderloin on top of the mugwort and tie the pieces together with kitchen string.
- Then grill the tenderloin on indirect heat for about 20 minutes, until it is still juicy but has absorbed good flavour from the mugwort.
- Unwrap and slice the tenderloin thinly, optionally place it back on the "bed" of mugwort.
