Spring salad with smoked fish

From early spring you can make fantastic salads.

Ingredients

  • Salted salmon
  • Herbs for salad
  • Oil
  • Vinegar

Instructions

  1. Place a piece of salted salmon or trout in a small smoker, such as a Kasper Røghat, which you can buy together with beech sawdust from fishing tackle shops.
  2. Make a mixed salad of the best of April: dandelion, ground elder, hairy bittercress, sweet cicely, dead nettle, red dead nettle, garlic mustard, yarrow, beech leaves, sorrel, watercress, chickweed, fat hen or similar.
  3. Taste the herbs and find the right balance in terms of bitterness. Toss the herbs in an oil-vinegar dressing and arrange the salad on plates with the warm fish on top.
