Spring–summer (April–June)
Wild herbs
Sea kale's faithful companion. They thrive on the same stony beaches. It stands dark green and low with fleshy leaves. It can be used throughout winter, but is at its best when it rises in April and May before flowering. Sea beet's salty, green leaves are used steamed as a garnish for fish. Quick-stewed leaves with fried fish make my mouth water.
