Summer (June–September) Wild herbs

Feathery leaf, later in the season with flat white or pink flowers. It grows in meadows, beaches and roadsides and blooms throughout the summer. It thrives in nutrient-poor soil. In New Nordic cuisine the flowers are used as decorative and aromatic elements in salads, syrups and as a subtle flavouring in baked goods and desserts. The flower should be used in limited quantities, and pregnant women should avoid it. The leaves are mild while the flower is very bitter, which is why it is also a well-known schnapps herb.
