Spring (April–May)
Wild herbs
Low and sun-hungry with toothed leaves and bright yellow flowers. It grows almost everywhere on open areas like meadows and lawns, but adapted varieties exist everywhere. It blooms from spring to summer. In modern Nordic cuisine, both leaves and flowers are used in salads, petals for flower syrups. I like to fry it and make the forager's breakfast with an egg on a piece of toasted bread. Dandelion is bitter, but heat and fat help it onto the table.
