Wild herbs
Elder
A lush bush with white flower clusters and dark berries. Most people know its blooming fragrance in May–June and its berries later in the summer. Elderflower is used for juice, syrup and desserts, but also in savoury dishes with e.g. fish. My favourite thing to make with elder is perhaps capers from the unripe berries in July.
