- Pick the wild garlic seeds in June, before the plants lie down, as it otherwise takes a long time to collect the seeds. Pick the whole flower head in the forest and save cleaning and fine-picking for the kitchen counter.
- Use a fork to separate the small seeds from the stems, rinse them thoroughly and place them in salt for 2 months in a sealed plastic container. Shake occasionally.
- Then rinse the seeds and place them in a cooled vinegar brine consisting of 2 parts vinegar, 1 part water and 1 part sugar.
- After 1 month in the brine they are ready to use and can keep for years.
