This simple dish has become a new classic in my kitchen, and I know it has inspired many places. I got the idea from a breakfast buffet in Tokyo, where mushrooms on toast is a staple.

  • dried black trumpets
  • soy sauce
  • optional dried seaweed

Instructions

  1. In reality, the recipe simply consists of placing dried black trumpets in soy sauce and letting them steep for about a week.
  2. I use this little dish for sushi, on top of eggs, for a quick dinner with boiled rice and a little sesame. Basically everywhere where mushroom flavor is needed.
  3. The soy takes on mushroom flavor and can be used for sauces, marinades, or steamed cabbage, among other things.
