Tacos are a perfect way to eat mushrooms, as they easily serve as the bread in the meal. You can portion and plate your tacos beautifully, but it's far cozier to just set out everything.

Ingredients

  • black trumpets, chanterelle s, and hedgehog mushroom s
  • a little butter and oil for frying
  • fermented mushroom cream, see recipe page xx
  • porcini jerky, see recipe page xx
  • salsa mexicana
  • fresh red chili
  • oaxaca cheese
  • creme fraiche
  • tacos
  • Pico de gallo:
  • cherry tomatoes
  • red onion
  • fresh green chili
  • coriander
  • lime juice
  • Guacamole:
  • avocado
  • garlic
  • lemon juice
  • a little creme fraiche
  • salt and pepper
  • optional herbs and flowers for garnish

Instructions

  1. Prepare a delicious pico de gallo and a guacamole. Finely chop the red chili, and grate the cheese. Arrange bowls with guacamole, pico de gallo, red chili, mushroom cream, cheese, and herbs.
  2. Fry the mushrooms, and place them on a platter. Arrange everything beautifully on a table, and serve!
  3. Here I've garnished with Cuban oregano, coriander seeds and flowers, Mexican tarragon, and lots of flowers.
