This is a delicious flavor enhancer that can especially elevate the taste of many vegetables. Miso is very salty and rich in flavor. Here a mushroom is added that provides flavor and color.

  • large boletes
  • lemon juice
  • oil
  • miso
  • salt and pepper

Instructions

  1. Cut the mushrooms into smaller pieces, and fry them in a pan with a little oil. Season with pepper.
  2. Pour the pan contents into a tall glass and blend with a stick blender. Add lemon juice and optionally a little oil if the mixture is too thick to blend.
  3. Finally add 2-3 tbsp miso to taste, and blend again until you have a homogeneous mixture.
  4. Mushroom miso can be dried in a dehydrator and achieve a long shelf life.
