Bread has become a completely different game these days, and the level of baking is something else entirely. Yeast is something you preferably avoid, rising times are endless, and the flour types are many. Mushroom bread is a wonderful companion to mushroom dishes, and it gives a wonderful aroma and flavor.

Wild ingredients

Ingredients

  • ½ litre water
  • 10 g yeast
  • 1 small handful of salt
  • 3-4 tbsp mushroom flour, see recipe page xx
  • approx. 8 dl wheat flour

Instructions

  1. Stir water, yeast, and salt. Add mushroom flour, then stir in wheat flour until you have a firm and smooth consistency. Let the dough rise overnight.
  2. Shape into rolls or loaves, and let them proof for one hour.
  3. Then bake at 200 degrees for 25 minutes if making rolls, and about an hour if you've shaped a large loaf.
