Indigo bolete is clearly the best mushroom for this dish, but other small and completely firm boletes can also be used. On a good day, you'll find mushrooms with the most wonderful blue color.

Instructions
- First make your ant-blueberry paste by grinding a large handful of blueberries and 100 to 200 red wood ants with a little Sichuan pepper into a homogeneous paste. Then add salt.
- Slice the mushrooms thinly on a mandoline, then fry them in butter or oil in a pan.
- Arrange the mushrooms flat, and cover with your ant-blueberry paste. Season with salt and pepper, and optionally garnish with blueberries.
