Grilled deer heart with black trumpets, blackberries, and pickled wild onions

Game, berries, and mushrooms are a trinity that works well together. Here I've added pickled onions. Deer heart is one of my favorite game foods, and it's easy to prepare.

- Trim the deer hearts free of membranes and chambers. You can cut two large pieces from each heart, and it's a bit easier to handle if you set them aside.
- Grill the deer hearts on both sides for as short a time as you feel comfortable with. I like red hearts, and it is certain that the grill time rarely exceeds 2-3 minutes per side.
- Let the hearts rest for 3 minutes on a cutting board, and slice them.
- Clean the black trumpets by snipping off the bottom part, and split them so woodlice, leaves, and the like can come out. Then fry the mushrooms in butter, and season.
- Arrange the mushrooms with halved pickled wild onions, halved blackberries, and drizzle with a little good olive oil.
