Cauliflower fungus with herb crust

This dish is inspired by cauliflower gratin! A dish that was popular in my childhood, and which might be ready for a comeback in a wild mushroom version. The dish can be varied endlessly.

Ingredients

  • 1 cauliflower fungus
  • oil for frying
  • Herb crust:
  • 1 small bunch of parsley
  • 1 bag of breadcrumbs
  • 1 clove garlic
  • 50 g butter
  • 50 g parmesan

Instructions

  1. Cut the mushroom so the size roughly matches half a handball. Check for bugs and dirt in the mushroom. Some cauliflower mushrooms are very messy, others are quite clean.
  2. Depending on the size, fry the mushroom on all sides in oil in the pan.
  3. Make herb crust in a food processor with parsley, breadcrumbs, garlic, butter, and parmesan.
  4. After frying, sprinkle the mushroom with the herb crust in a dish and bake at 200 degrees until the crust is beautifully golden.
  5. Serve in slices as shown in the picture.
