Cauliflower fungus with herb crust

This dish is inspired by cauliflower gratin! A dish that was popular in my childhood, and which might be ready for a comeback in a wild mushroom version. The dish can be varied endlessly.
Wild ingredients
Instructions
- Cut the mushroom so the size roughly matches half a handball. Check for bugs and dirt in the mushroom. Some cauliflower mushrooms are very messy, others are quite clean.
- Depending on the size, fry the mushroom on all sides in oil in the pan.
- Make herb crust in a food processor with parsley, breadcrumbs, garlic, butter, and parmesan.
- After frying, sprinkle the mushroom with the herb crust in a dish and bake at 200 degrees until the crust is beautifully golden.
- Serve in slices as shown in the picture.
